OUR STORY

Approximately ten years' ago, my long term partner - Matt, was diagnosed with Coeliacs disease. For those of you who experienced wheat free food back then, it wasn't great. Specially ordered bread, pasta and cereal from pharmacies which tasted...well - awful! Thankfully, we can all see the back of those times and welcome seeing fully stocked shelves of a wide variety of free from goods. However, whilst there is certain improvement, I personally don't feel there are enough eateries and superstores who offer a variety of fresh wheat free and gluten free goods - namely CAKE! 

 

Picture this... you walk by a cake shop, your eyes light up at the sight of all the different types of flavours and you scan for the one which takes your fancy...there it is [insert your favourite flavour here] but wait. You turn to look at your partner who patiently holds your hand as you glare wide-eyed into the window and you notice they don't share the same glow as you, but don't be fooled - they have looked for their favourite and it's there alright but they can't have it because they are all made with, yes you guessed it - wheat flour. Ever the optimist, you head inside to ask if the shop stocks any gluten free cakes and you receive one of three stock responses: 'No sorry, we don't do any' OR 'We're sold out' OR 'Yes, here are the two [if you're lucky] flavours we offer'. So, yet again, you leave empty handed or your partner is made to choose the same flavours which don't match up to everything else they're surrounded by.

 

So, being the keen baker I always have been I decided that enough was enough and for the past four years' (since Matt and I met), I have set about perfecting different cake recipes and evolving 'classic' recipes to be gluten free and dairy free (as we soon discovered Matt also had an intolerance to all things dairy and that the two can often go hand in hand). We have tried and tested supermarket gluten free cakes and found them to be laden with E numbers or additives not even mentioning the burning sensation left in the back of your tonsils! I have tried specific gluten free cake recipes but couldn't find (or didn't know) half of the ingredients they suggested I use. So after much trial and testing (including the odd 'exploding-as-soon-as-a-knife-touches-it cake') it was as if by magic I finally created a thing of beauty, a gluten and dairy free cake which tasted like a regular cake. By this stage, I had to share the cakes with my work colleagues, family and friends who all gave it the thumbs up and were in agreement that it tasted like a regular cake. Delighted, I decided I couldn't stop there...

 

I am now pleased to be launching The Gluten Free Cake Kitchen est. 2014, which offers gluten and dairy free cakes in as many flavours and designs as you can shake a stick at!
